Vegan chickpea mayonnaise
Do you no longer eat animal products? Don’t worry, there is a way to replace eggs for delicious vegan mayonnaise.
The egg is replaced by aquafaba: this is the water in which the chickpeas are preserved in their box. It can be mixed with a hand blender for better results and can be stored in the fridge for 3-4 days.
Aquafaba mayonnaise: ingredients
- 45 ml aquafaba
- 5 ml of wine vinegar
- 1-2 tablespoons of mustard (to taste)
- salt , pepper to taste
- 200 ml olive oil (or neutral oil)

In a bowl mix the aquafaba, wine vinegar, mustard, salt and pepper.
Add the oil in 4/5 additions while mixing. At this point the mixture still looks like a vinaigrette, which is completely normal. It usually comes up in 10 to 15 minutes.
What to do if your aquafaba mayonnaise does not rise? If it doesn’t set after you have added all the oil, put it in the fridge for 20/30 minutes then mix it again, it should work.

Put the silken tofu in a bowl and mix with a blender (avoid the whisk), then add the mustard and vinegar without stopping mixing. Stop as soon as the desired firmness is achieved.
Another option is to replace the tofu with soy cream or vegetable cream (count 15 cl) and keep the rest of the ingredients for the vegan tofu mayonnaise. The recipe remains the same.

Vegan cashew mayonnaise
Now here is another vegetable mayonnaise recipe. This one uses cashews.

- 100 ml of water
- 100g cashew nuts
- 1 to 2 teaspoons of mustard (according to your taste)
- 1 tablespoon of olive oil
- Salt and pepper to taste

Soak the cashew nuts for a few hours in cold water then drain them.
Place the ingredients in a bowl and blend with a blender until you obtain the desired consistency for your vegan cashew mayonnaise. It will keep for a few days in the fridge.
