Ingredients:

  • 1 lb garlic scapes, trimmed and cut into 2-3 inch pieces
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/4 tsp smoked paprika

Instructions:

  1. Trim the woody ends and the flower buds from the garlic scapes. Using kitchen shears or a knife, cut the stems into uniform 2-3 inch lengths.
  2. Place the cut scapes in a large mixing bowl. Drizzle with the olive oil and sprinkle with salt, pepper, and smoked paprika. Toss vigorously until every scape has an even coating.
  3. Preheat the air fryer to 380°F (193°C). Spread the scapes in the basket, allowing for slight overlap while maintaining air circulation.
  4. Cook for 6 minutes total, shaking the basket firmly at the 3-minute mark to redistribute the scapes until the edges are charred and mahogany-colored.
