Ingredients:

  • 1 lb (450g) fresh garlic scapes, trimmed and cut into 2-3 inch pieces
  • 2 tbsp (30ml) extra-virgin olive oil
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) freshly cracked black pepper
  • ¼ cup (25g) freshly grated Parmesan cheese
  • ½ tsp (2g) red pepper flakes
  • 1 tsp (5g) lemon zest

Instructions:

  1. Preheat your oven to 425°F (218°C).
  2. In a large mixing bowl, combine the cut garlic scapes, olive oil, salt, and pepper. Toss vigorously until every inch of the scapes is glistening. If using Parmesan, toss it in now so the cheese adheres to the oil.
  3. Spread the scapes in a single layer on a rimmed baking sheet lined with parchment paper or a silicone mat. Ensure the pan is not crowded to prevent steaming.
  4. Roast for 15-20 minutes. Halfway through the cooking time, use tongs to toss and flip the scapes for an even, mahogany-colored finish.
  5. Remove from the oven once the tips are charred and the stalks feel firm and crispy. Transfer immediately to a plate and sprinkle with lemon zest while sizzling.
