Ingredients:
- 1 lb lean ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 3 large green bell peppers, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup uncooked long-grain white rice
- 1/2 cup fresh parsley, chopped
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add ground beef and diced onion, cooking until beef is browned and onions are translucent. Stir in minced garlic and cook for 1 minute.
- Transfer the beef mixture into the slow cooker. Add diced green peppers, diced tomatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir until combined.
- Cover and cook on Low for 6 hours or High for 3 hours.
- While the soup is in its final 20 minutes of cooking, cook the white rice separately according to package instructions.
- Once the soup is finished, stir in the cooked rice and fresh parsley. Serve hot.
