Ingredients:

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 3 large green bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup uncooked long-grain white rice
  • 1/2 cup fresh parsley, chopped

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add ground beef and diced onion, cooking until beef is browned and onions are translucent. Stir in minced garlic and cook for 1 minute.
  2. Transfer the beef mixture into the slow cooker. Add diced green peppers, diced tomatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir until combined.
  3. Cover and cook on Low for 6 hours or High for 3 hours.
  4. While the soup is in its final 20 minutes of cooking, cook the white rice separately according to package instructions.
  5. Once the soup is finished, stir in the cooked rice and fresh parsley. Serve hot.
