Ingredients:
- 1 lb lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 3 large green bell peppers, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 tsp Worcestershire sauce
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked white rice
- 1 cup shredded mozzarella or cheddar cheese
Instructions:
- Heat olive oil in a skillet over medium-high heat.
- Add the ground beef and diced onion to the skillet. Cook, breaking the meat apart, until the beef is browned and no longer pink.
- Stir in the minced garlic and cook for 60 seconds until fragrant.
- Transfer the beef mixture into the bottom of the slow cooker.
- Add diced green peppers, undrained diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, salt, and pepper to the slow cooker.
- Stir all ingredients together until well combined.
- Cover and cook on Low for 8 hours until peppers are tender.
- Stir in the pre-cooked white rice and optional shredded cheese just before serving.
