Ingredients:

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 3 large green bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked white rice
  • 1 cup shredded mozzarella or cheddar cheese

Instructions:

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the ground beef and diced onion to the skillet. Cook, breaking the meat apart, until the beef is browned and no longer pink.
  3. Stir in the minced garlic and cook for 60 seconds until fragrant.
  4. Transfer the beef mixture into the bottom of the slow cooker.
  5. Add diced green peppers, undrained diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, salt, and pepper to the slow cooker.
  6. Stir all ingredients together until well combined.
  7. Cover and cook on Low for 8 hours until peppers are tender.
  8. Stir in the pre-cooked white rice and optional shredded cheese just before serving.
