Ingredients:

  • 1 lb fresh garlic scapes, trimmed and cleaned
  • 1 cup white vinegar
  • 1 cup filtered water
  • 1 tbsp pickling salt
  • 1 tbsp granulated sugar
  • 1 tsp whole black peppercorns
  • 1 tsp yellow mustard seeds
  • 1/2 tsp red pepper flakes

Instructions:

  1. Rinse the garlic scapes thoroughly under cold water and pat them completely dry with a towel.
  2. Trim the scapes into 3- to 4-inch lengths. Chop the curly blossom ends into 1-inch pieces to fill gaps in the jar.
  3. In a small saucepan, combine the white vinegar, water, pickling salt, and sugar.
  4. Bring the mixture to a rolling boil over medium-high heat.
  5. Stir in the peppercorns, mustard seeds, and red pepper flakes, then remove from heat immediately.
  6. Pack the straight scape pieces into the jars by twirling them around the inner edge of the glass, then stuff the smaller curly pieces into the center, leaving 1/2 inch of headspace.
  7. Carefully pour the hot brine over the scapes until they are completely submerged.
  8. Tap the jars gently on the counter to release trapped air bubbles and seal the lids tightly.
