Ingredients:
- 1 can (15 oz) chickpeas, rinsed, patted dry, and skins removed
- 1/2 cup creamy almond butter
- 1/4 cup pure maple syrup
- 2 tbsp oat flour
- 1 tbsp pure vanilla extract
- 1/4 tsp fine sea salt
- 1/3 cup dark chocolate chips
Instructions:
- Drain and rinse the chickpeas under cold water. To ensure a smooth texture, pinch each chickpea gently between your thumb and forefinger; the skin should slide right off. Discard the skins and pat the chickpeas thoroughly dry.
- Place the dried chickpeas, almond butter, maple syrup, oat flour, vanilla extract, and sea salt into a food processor.
- Process on high speed for 1 to 2 minutes, stopping halfway to scrape down the sides with a rubber spatula, until the mixture is completely smooth and glossy.
- Fold in the dark chocolate chips by hand using a spatula.
- Serve immediately at room temperature or chill in the refrigerator for a firmer consistency.
