Ingredients:

  • 1 can (15 oz) chickpeas, rinsed, patted dry, and skins removed
  • 1/2 cup creamy almond butter
  • 1/4 cup pure maple syrup
  • 2 tbsp oat flour
  • 1 tbsp pure vanilla extract
  • 1/4 tsp fine sea salt
  • 1/3 cup dark chocolate chips

Instructions:

  1. Drain and rinse the chickpeas under cold water. To ensure a smooth texture, pinch each chickpea gently between your thumb and forefinger; the skin should slide right off. Discard the skins and pat the chickpeas thoroughly dry.
  2. Place the dried chickpeas, almond butter, maple syrup, oat flour, vanilla extract, and sea salt into a food processor.
  3. Process on high speed for 1 to 2 minutes, stopping halfway to scrape down the sides with a rubber spatula, until the mixture is completely smooth and glossy.
  4. Fold in the dark chocolate chips by hand using a spatula.
  5. Serve immediately at room temperature or chill in the refrigerator for a firmer consistency.
