Ingredients:
- 1 lb fresh green beans, trimmed
- 1 cup fresh garlic scapes, sliced into 1-inch pieces
- 1/4 cup shaved Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp apple cider vinegar
- 1/2 tsp fine sea salt
- 1/4 tsp freshly cracked black pepper
- 1 pinch granulated sugar
Instructions:
- Prepare an ice bath by filling a large mixing bowl with cold water and a generous handful of ice cubes.
- Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and sliced garlic scapes and boil for exactly 2 minutes.
- Immediately drain the vegetables in a colander and plunge them into the ice bath for 2-3 minutes until completely chilled. Drain thoroughly and pat dry with a kitchen towel.
- In a small jar or bowl, combine the olive oil, lemon juice, apple cider vinegar, salt, pepper, and sugar. Shake or whisk vigorously until the mixture is emulsified and opaque.
- Place the chilled beans and scapes in a large mixing bowl. Pour the vinaigrette over the vegetables and toss with the shaved Parmesan and chopped parsley until evenly coated.
