Ingredients:

  • 1 lb fresh green beans, trimmed
  • 1 cup fresh garlic scapes, sliced into 1-inch pieces
  • 1/4 cup shaved Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper
  • 1 pinch granulated sugar

Instructions:

  1. Prepare an ice bath by filling a large mixing bowl with cold water and a generous handful of ice cubes.
  2. Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and sliced garlic scapes and boil for exactly 2 minutes.
  3. Immediately drain the vegetables in a colander and plunge them into the ice bath for 2-3 minutes until completely chilled. Drain thoroughly and pat dry with a kitchen towel.
  4. In a small jar or bowl, combine the olive oil, lemon juice, apple cider vinegar, salt, pepper, and sugar. Shake or whisk vigorously until the mixture is emulsified and opaque.
  5. Place the chilled beans and scapes in a large mixing bowl. Pour the vinaigrette over the vegetables and toss with the shaved Parmesan and chopped parsley until evenly coated.
