Ingredients:
- 1 lb (450g) 93% lean ground beef
- 1 tbsp (15ml) olive oil
- 1 large (150g) yellow onion, diced
- 3 cloves (15g) garlic, minced
- 3 large (450g) green bell peppers, diced into ½-inch pieces
- 1 can (14.5 oz / 411g) diced tomatoes, undrained
- 1 can (8 oz / 227g) tomato sauce
- 4 cups (945ml) low-sodium beef broth
- 1 tbsp (15ml) Worcestershire sauce
- 1 tsp (5g) dried oregano
- ½ tsp (2.5g) salt
- ¼ tsp (1.25g) black pepper
- 1 cup (190g) cooked brown rice
- ¼ cup (10g) fresh parsley, chopped
Instructions:
- Heat the olive oil in a Dutch oven over medium-high heat.
- Add the lean ground beef, breaking it apart with a spoon, and cook until browned and crumbly (about 5-7 minutes), then drain any excess fat.
- Stir in the diced onion and garlic; sauté for 3-5 minutes until the onion becomes translucent and fragrant.
- Add the diced green peppers to the pot and cook for another 5 minutes until they begin to soften.
- Pour in the diced tomatoes, tomato sauce, and beef broth.
- Stir in the Worcestershire sauce, dried oregano, salt, and black pepper, scraping the bottom of the pot to release the browned beef bits.
- Lower the heat and simmer for 20 mins until the aroma is rich and the liquid has thickened slightly.
- Stir in the cooked brown rice and fresh parsley just before serving.
