Ingredients:
- 3 large Honeycrisp apples, cored and sliced
- 1 cup ice water
- 2 tbsp fresh lemon juice
- 1/2 cup creamy natural peanut butter
- 1 tbsp virgin coconut oil
- 1 tsp ground Ceylon cinnamon
- 1 tbsp pure maple syrup
- 1/4 cup sliced almonds
- 2 tbsp hemp hearts
- 1/4 cup high-protein granola
- 2 tbsp mini dark chocolate chips (70% cocoa)
- 1 pinch flaky sea salt
Instructions:
- Core the apples and slice them into 1/4-inch thick wedges. Submerge immediately in a bowl containing ice water and lemon juice for 5 minutes to prevent oxidation and tighten the pectin.
- Drain the apples and pat them completely dry with a clean kitchen towel to ensure the protein drizzle adheres properly.
- In a small microwave-safe bowl, combine peanut butter, coconut oil, and cinnamon. Microwave in 20-second intervals, stirring between each, until the mixture is fluid and glossy.
- Arrange half of the apple slices in a circular shingle pattern on a large platter. Drizzle with half of the peanut butter mixture.
- Sprinkle half of the sliced almonds, hemp hearts, granola, and dark chocolate chips over the first layer.
- Repeat the layering process with the remaining apples, drizzle, and toppings. Finish with a pinch of flaky sea salt.
