Ingredients:

  • 1 lb fresh garlic scapes, trimmed to 3-inch lengths
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp fresh lemon juice
  • 1/2 tsp honey

Instructions:

  1. Wash the garlic scapes thoroughly under cold water and pat them completely dry with a towel. Trim the woody bottom ends and cut the stems into uniform 3-inch pieces.
  2. Heat the olive oil in a cast iron skillet or large non-stick pan over medium-high heat until it shimmers.
  3. Add the scapes in a single layer and let them sit undisturbed for 2–3 minutes until mahogany-colored charred edges develop.
  4. Toss the scapes with tongs and sauté for another 2 minutes until the stems are bright green and tender-crisp.
  5. Reduce the heat to medium. Pour in the soy sauce, rice wine vinegar, lemon juice, and honey. Toss rapidly for 30–60 seconds until the liquid reduces into a glossy coating.
  6. Remove from heat immediately to prevent overcooking.
