Ingredients:

  • 1 cup (255g) creamy natural peanut butter
  • 1/3 cup (110g) honey
  • 1 cup (90g) rolled oats
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) sea salt
  • 1/3 cup (60g) mini semi-sweet chocolate chips
  • 1/2 cup (85g) dark chocolate chips
  • 1 tbsp (15g) coconut oil

Instructions:

  1. In a medium bowl, combine the peanut butter, honey, vanilla extract, and salt. Stir vigorously with a spatula until the mixture is smooth and glossy.
  2. Add the rolled oats and chocolate chips. Fold the mixture gently until no streaks of dry oats remain.
  3. Line a baking sheet with parchment paper. Scoop about 1 tablespoon of dough and roll it between your palms to form a smooth sphere. Place on the sheet and refrigerate for 30 minutes.
  4. Optional: Melt the dark chocolate and coconut oil in 30-second bursts in the microwave. Dip the chilled balls into the chocolate using a fork, let the excess drip off, and return to the fridge for 10 minutes to set the shell.
