Ingredients:
- 4 large green bell peppers (approx. 1.5 lbs / 680g)
- 1 tbsp olive oil
- 1/2 cup marinara sauce
- 1/2 lb lean ground beef
- 1/2 lb Italian sausage
- 1 cup cooked white rice
- 1 small onion, finely diced (approx. 100g)
- 3 cloves garlic, minced (approx. 9g)
- 1 can (15 oz / 425g) tomato sauce
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 large egg, lightly beaten
- 1 tsp dried oregano
- salt to taste
- black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Slice the tops off the green bell peppers and remove the seeds and membranes. Drizzle the insides with a touch of olive oil and a pinch of salt.
- In a large skillet over medium-high heat, brown the ground beef and Italian sausage together, breaking the meat into small crumbles until deep mahogany in color.
- Stir in the diced onion and garlic, cooking for 3-5 minutes until the onion is translucent and garlic is fragrant.
- Transfer the meat mixture to a large bowl. Fold in the cooked rice, Parmesan cheese, beaten egg, oregano, and half of the tomato sauce. Season with salt and pepper.
- Pour the marinara sauce into the bottom of a baking dish. Stuff each pepper generously with the meat mixture, pressing down lightly, and top with shredded mozzarella cheese.
- Bake until peppers are tender and the cheese crust is golden brown.
