Ingredients:

  • 4 large green bell peppers (approx. 1.5 lbs / 680g)
  • 1 tbsp olive oil
  • 1/2 cup marinara sauce
  • 1/2 lb lean ground beef
  • 1/2 lb Italian sausage
  • 1 cup cooked white rice
  • 1 small onion, finely diced (approx. 100g)
  • 3 cloves garlic, minced (approx. 9g)
  • 1 can (15 oz / 425g) tomato sauce
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 large egg, lightly beaten
  • 1 tsp dried oregano
  • salt to taste
  • black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Slice the tops off the green bell peppers and remove the seeds and membranes. Drizzle the insides with a touch of olive oil and a pinch of salt.
  2. In a large skillet over medium-high heat, brown the ground beef and Italian sausage together, breaking the meat into small crumbles until deep mahogany in color.
  3. Stir in the diced onion and garlic, cooking for 3-5 minutes until the onion is translucent and garlic is fragrant.
  4. Transfer the meat mixture to a large bowl. Fold in the cooked rice, Parmesan cheese, beaten egg, oregano, and half of the tomato sauce. Season with salt and pepper.
  5. Pour the marinara sauce into the bottom of a baking dish. Stuff each pepper generously with the meat mixture, pressing down lightly, and top with shredded mozzarella cheese.
  6. Bake until peppers are tender and the cheese crust is golden brown.
