Ingredients:

  • 1 lb garlic scapes
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan cheese
  • 1 tsp fresh lemon zest

Instructions:

  1. Preheat oven to 425°F (220°C). Wash the garlic scapes and pat them completely dry. Trim the woody flower heads from the top and the tough root ends from the bottom, then cut the scapes into 3-inch lengths.
  2. In a large mixing bowl, combine the trimmed scapes, olive oil, salt, and pepper. Toss vigorously until every curl is evenly coated.
  3. Line a baking sheet with parchment paper. Spread the scapes in a single layer, ensuring they do not touch. Roast for 12–15 minutes until they shrink slightly and develop a deep golden-brown color.
  4. Remove from the oven and immediately sprinkle the grated Parmesan and lemon zest over the hot scapes.
