Ingredients:

  • 1 cup (256g) creamy peanut butter
  • 1/2 cup (170g) honey
  • 1 cup (90g) rolled oats
  • 2 tbsp (15g) chia seeds

Instructions:

  1. In a large mixing bowl, stir together the rolled oats and chia seeds.
  2. Add the peanut butter and honey to the dry ingredients. Fold with a spatula until the dough becomes thick, tacky, and no dry streaks remain.
  3. Let the dough sit for 5 minutes to allow the chia seeds to swell and stabilize the mixture.
  4. Using a cookie scoop, portion the dough and roll between palms into 1-inch spheres.
