- 2 cups (300g) English cucumber, diced
- 1 cup (150g) Cherry tomatoes, halved
- 1/2 cup (75g) Feta cheese, crumbled
- 3 tbsp (45ml) Greek vinaigrette
Instructions:
- Dice the cucumber and halve the tomatoes. Ensure the rotisserie chicken is chilled before adding to the bowl to prevent the feta from melting upon contact.
- Place the shredded chicken, diced cucumbers, and halved tomatoes into a large mixing bowl. Toss gently to distribute the colors evenly.
- Pour the Greek vinaigrette over the mixture. Use a silicone spatula to fold the dressing in using a 'bottom-to-top' motion until every piece of chicken is coated.
- Gently fold in the crumbled feta last to ensure the cheese remains in distinct, creamy chunks.
