Ingredients:

  • 1 lb (450g) Rotisserie chicken breast, shredded or cubed
  • 2 cups (300g) English cucumber, diced
  • 1 cup (150g) Cherry tomatoes, halved
  • 1/2 cup (75g) Feta cheese, crumbled
  • 3 tbsp (45ml) Greek vinaigrette

Instructions:

  1. Dice the cucumber and halve the tomatoes. Ensure the rotisserie chicken is chilled before adding to the bowl to prevent the feta from melting upon contact.
  2. Place the shredded chicken, diced cucumbers, and halved tomatoes into a large mixing bowl. Toss gently to distribute the colors evenly.
  3. Pour the Greek vinaigrette over the mixture. Use a silicone spatula to fold the dressing in using a 'bottom-to-top' motion until every piece of chicken is coated.
  4. Gently fold in the crumbled feta last to ensure the cheese remains in distinct, creamy chunks.
