Ingredients:
- 1 lb (450g) sweet potatoes, peeled and diced into ½ inch cubes
- 2 cups (150g) broccoli florets, bite-sized
- 1 red bell pepper, diced
- 1 can (15 oz / 425g) chickpeas, drained and patted dry
- 3 tbsp (45ml) extra virgin olive oil
- 1 tsp (6g) kosher salt
- ½ tsp (3g) black pepper
- 1 cup (170g) uncooked quinoa, rinsed thoroughly
- 2 cups (480ml) vegetable broth or water
- ½ tsp (3g) salt
- ¼ cup (60ml) balsamic vinegar
- 3 tbsp (45ml) extra virgin olive oil
- 1 tbsp (15ml) maple syrup
- 1 tsp (5g) Dijon mustard
- 1 clove garlic, minced
- ½ cup (75g) crumbled feta cheese
- ¼ cup (15g) fresh parsley, chopped
- 2 tbsp (15g) toasted sunflower seeds or pumpkin seeds
Instructions:
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, toss the sweet potatoes, broccoli, bell pepper, and chickpeas with olive oil, salt, and pepper. Spread the vegetables in a single layer.
- Roast for 25–30 minutes, tossing halfway through, until the edges are mahogany-colored and the broccoli is slightly charred.
- Combine rinsed quinoa, broth, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove quinoa from heat and let it sit, covered, for 5 minutes before fluffing with a fork until light and airy.
- In a jar or bowl, whisk together the balsamic vinegar, olive oil, maple syrup, Dijon mustard, and minced garlic. Adjust salt and pepper to taste.
- Transfer the warm quinoa to a large mixing bowl and fold in the roasted vegetables and chickpeas.
- Drizzle the balsamic dressing over the mixture while components are still warm, then gently fold in the feta cheese and fresh parsley.
- Top with toasted seeds just before serving.
