Ingredients:

  • 1 cup (225g) mashed overripe bananas
  • 1 large egg
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 2 cups (224g) super-fine blanched almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup (50g) dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Whisk in the egg, maple syrup, and vanilla extract vigorously for 30 seconds to incorporate air.
  3. Sift the almond flour, baking soda, salt, and cinnamon into the wet mixture. Stir until just combined.
  4. Fold in the dark chocolate chips and any optional nuts if using.
  5. Use a 1.5 tablespoon cookie scoop to drop mounds of dough onto the prepared baking sheet. Flatten slightly as these cookies do not spread much.
  6. Bake for 15 minutes or until the bottoms are golden brown and the tops are set. Let cool on the pan for 10 minutes before transferring to a wire rack.
