Ingredients:
- 1 cup (225g) mashed overripe bananas
- 1 large egg
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 2 cups (224g) super-fine blanched almond flour
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 1/2 tsp ground cinnamon
- 1/3 cup (50g) dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas until smooth. Whisk in the egg, maple syrup, and vanilla extract vigorously for 30 seconds to incorporate air.
- Sift the almond flour, baking soda, salt, and cinnamon into the wet mixture. Stir until just combined.
- Fold in the dark chocolate chips and any optional nuts if using.
- Use a 1.5 tablespoon cookie scoop to drop mounds of dough onto the prepared baking sheet. Flatten slightly as these cookies do not spread much.
- Bake for 15 minutes or until the bottoms are golden brown and the tops are set. Let cool on the pan for 10 minutes before transferring to a wire rack.
