Ingredients:

- 2 ¼ tsp active dry yeast
- 1 tbsp granulated sugar
- 1 tsp salt
- 3 cups bread flour
- 2 tbsp unsalted butter, melted
- 4 cups water
- ½ cup baking soda
- 3 tbsp unsalted butter, melted
- 2 tbsp coarse pretzel salt
Instructions:
- Bloom the Yeast: Stir warm water, sugar, and yeast in a bowl. Let it sit for 5-10 minutes until a foamy layer forms on top.
- Mix & Knead: Incorporate melted butter, salt, and flour. Knead for 5 minutes by hand or 3 minutes with a mixer until the dough is smooth and elastic.
- The Short Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 30 minutes.
- Shape the Bites: Punch down the dough and roll it into a rectangle on a floured surface. Slice into strips, then cut those strips into small 1-inch squares.
- Prepare the Bath: Bring 4 cups of water and baking soda to a rolling boil.
- The Dip: Drop dough bites into the boiling water for 30 seconds each. Remove with a slotted spoon and place on a parchment-lined baking sheet.
- The Finish: Brush the boiled bites immediately with melted butter and sprinkle generously with coarse salt.
- Bake: Bake at 425°F (218°C) for 12-15 minutes until they reach a deep, golden-brown hue.
