Ingredients:
- 1 bunch (approx. 8 oz / 225g) fresh garlic scapes, woody ends trimmed
- 1/2 lb (225g) fresh green beans, trimmed
- 1/4 cup (15g) red onion, thinly sliced
- 1/4 cup (15g) fresh parsley, chopped
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) balsamic vinegar
- 1 tsp (5g) Dijon mustard
- 1 tsp (5ml) maple syrup
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
Instructions:
- Trim the woody bottom of the scapes and the tightly closed flower buds at the top, then discard.
- Slice the scapes on a slight diagonal into thin rounds approximately 1/8 inch thick.
- Slice the green beans into 1-inch pieces. (Optional: blanch in boiling water for 60 seconds and plunge into ice water for a softer bite).
- Combine the olive oil, balsamic vinegar, mustard, maple syrup, salt, and pepper in a mason jar.
- Tighten the lid and shake vigorously for 30 seconds until the dressing is creamy and uniform.
- Place the sliced scapes, green beans, and red onion in a large mixing bowl.
- Pour the dressing over the vegetables and toss gently with a large spoon until evenly coated.
- Fold in the chopped parsley just before serving.
