Ingredients:

  • 6 tbsp aquafaba
  • 0.5 tsp cream of tartar
  • 4 cups powdered sugar
  • 1 tsp light corn syrup
  • 1 tsp pure vanilla extract

Instructions:

  1. Place the aquafaba and cream of tartar in a clean glass bowl or the bowl of a stand mixer.
  2. Using a whisk attachment, beat the mixture on medium-high speed for 2 to 3 minutes until it becomes a frothy, opaque foam.
  3. Turn the mixer to low speed and gradually add the sifted powdered sugar one cup at a time until incorporated.
  4. Add the pure vanilla extract and light corn syrup.
  5. Increase the mixer speed to high and whip for a full 5 minutes until the icing is thick, glossy, and holds its shape.
