Ingredients:
- 1/2 cup (115g) vegan butter, softened
- 3/4 cup (150g) granulated white sugar
- 2 tbsp (30ml) unsweetened applesauce
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (4g) cream of tartar
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 2 tbsp (25g) granulated white sugar
- 1 tbsp (8g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat the softened vegan butter and granulated sugar together until the mixture is pale and fluffy.
- Stir in the applesauce and vanilla extract until fully incorporated and smooth.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Slowly add the dry mixture to the wet ingredients. Mix on low speed or fold by hand until just combined; stop as soon as no streaks of flour remain.
- Combine the cinnamon and sugar in a small bowl.
- Scoop about 1.5 tablespoons of dough and roll it into a smooth ball between your palms.
- Roll the ball in the cinnamon-sugar mixture until heavily coated.
- Place the coated balls on a parchment-lined baking sheet and bake for 10 minutes.
