Ingredients:

  • 1/2 cup (115g) vegan butter, softened
  • 3/4 cup (150g) granulated white sugar
  • 2 tbsp (30ml) unsweetened applesauce
  • 1 tsp (5ml) vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp (4g) cream of tartar
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) fine sea salt
  • 2 tbsp (25g) granulated white sugar
  • 1 tbsp (8g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat the softened vegan butter and granulated sugar together until the mixture is pale and fluffy.
  3. Stir in the applesauce and vanilla extract until fully incorporated and smooth.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Slowly add the dry mixture to the wet ingredients. Mix on low speed or fold by hand until just combined; stop as soon as no streaks of flour remain.
  6. Combine the cinnamon and sugar in a small bowl.
  7. Scoop about 1.5 tablespoons of dough and roll it into a smooth ball between your palms.
  8. Roll the ball in the cinnamon-sugar mixture until heavily coated.
  9. Place the coated balls on a parchment-lined baking sheet and bake for 10 minutes.
