Ingredients:
- 4 cups (220g) green cabbage, finely diced
- 1 cup (150g) English cucumber, finely diced
- 1/2 cup (50g) green onions, thinly sliced
- 1/4 cup (15g) fresh chives, finely chopped
- 1/2 cup (60g) fresh parsley, minced
- 1 cup (30g) fresh baby spinach, packed
- 1/2 cup (25g) fresh basil leaves
- 1/4 cup (60ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (15ml) apple cider vinegar
- 1 clove (5g) garlic, peeled
- 2 tbsp (30g) parmesan cheese
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Finely dice the cabbage, cucumber, and green onions into tiny, uniform cubes (roughly 1/4 inch). Combine them in a large mixing bowl along with the chopped chives and parsley.
- Place the spinach, basil, olive oil, lemon juice, vinegar, garlic, parmesan, salt, and pepper into a blender. Blitz on high until the mixture transforms into a bright, smooth, and velvety green cream.
- Pour the dressing over the chopped vegetables and use a spatula to fold the mixture gently until every vegetable cube is fully coated. Serve immediately or let sit for 10 minutes.
