Ingredients:

  • 4 cups (220g) green cabbage, finely diced
  • 1 cup (150g) English cucumber, finely diced
  • 1/2 cup (50g) green onions, thinly sliced
  • 1/4 cup (15g) fresh chives, finely chopped
  • 1/2 cup (60g) fresh parsley, minced
  • 1 cup (30g) fresh baby spinach, packed
  • 1/2 cup (25g) fresh basil leaves
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tbsp (15ml) apple cider vinegar
  • 1 clove (5g) garlic, peeled
  • 2 tbsp (30g) parmesan cheese
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Finely dice the cabbage, cucumber, and green onions into tiny, uniform cubes (roughly 1/4 inch). Combine them in a large mixing bowl along with the chopped chives and parsley.
  2. Place the spinach, basil, olive oil, lemon juice, vinegar, garlic, parmesan, salt, and pepper into a blender. Blitz on high until the mixture transforms into a bright, smooth, and velvety green cream.
  3. Pour the dressing over the chopped vegetables and use a spatula to fold the mixture gently until every vegetable cube is fully coated. Serve immediately or let sit for 10 minutes.
