What dish to cook to entertain a vegetarian
Shepherd’s pie with lentils and sweet potato
Ingredients – Shepherd’s pie with lentils and sweet potato
- 100 ml of liquid cream
- 30 ml of olive oil
- 8 potatoes
- 10 button mushrooms
- 2 carrots
- 2 stalks of celery
- 1 onion
- 1 clove of garlic
- nutmeg , salt, pepper
Preparation – Shepherd’s pie with lentils and sweet potato
Peel, cut the potatoes into cubes and boil or steam them until cooked.
Wash and slice the vegetables and blend them quickly in the blender to maintain a slightly thick texture. Then cook them for around 15 minutes in a frying pan, season and add the liquid cream.
Spread your vegetables in a gratin dish.
Mash the potatoes with a fork and season with salt, pepper and nutmeg. Pour the thick puree over the vegetarian shepherd’s pie and cook in the oven for 30 to 35 minutes. Serve with a salad.
Stuffed seasonal vegetables
Ingredients for 4 people for stuffing – Stuffed seasonal vegetables
- 200 g firm tofu
- 100 g button mushrooms
- 120g quinoa
- 50 g black olives
- 20 cl of almond cream
- 1 onion
- 2 tbsp. to s. olive oil
- 1 bunch of fresh chives, salt, pepper.
Preparation – Stuffed seasonal vegetables
Cook the quinoa and drain it. Slice the onion and garlic and the mushrooms into strips, chop the chives and mash the tofu with a fork.
Brown the onion, then add the mushrooms, salt (not too much, because the olives are salty), pepper and add tofu, cooked quinoa, chives, olives and the almond cream.
Use this stuffing to stuff seasonal vegetables and cook them in the oven: zucchini, tomatoes, pumpkin, butternut, etc.
Vegetarian burger
In a vegetarian burger replace the ground steak with a semolina pancake and make your usual recipe.
Ingredients for 2 semolina pancakes
- 200 g of a mixture of fine and medium semolina
- 150 ml olive oil
- 1 glass of lukewarm milk
- water
- 1/2 tsp. teaspoon of salt
- 1 sachet of baking powder
Preparation of semolina pancake
Mix all the ingredients and let the semolina absorb the liquid. Mix and add water to make a smooth paste while mixing. Spread it to a thickness of 1 cm. Cut patties the size of minced steak. Cook in a pan for 2 or 3 minutes on each side in a little oil.
You can then assemble your hamburger normally with bread, salad, tomatoes or other ingredient of your choice.
