The cashew nut is the fruit of the cashew tree, a tree from tropical America. It is commercially available in its dry form and has a taste that is both sweet and intense. It is eaten as is, as a snack or as an aperitif for example.

But it is also an essential component of vegan and vegetarian cuisine and allows you to make easy and delicious dishes and desserts. The cashew nut is also used in the production of vegetable cheeses, sauces, etc… it’s a whole culinary universe to discover.

Cashew butter recipe

Creamy and delicious, cashew butter is popular for its flavors. Simply grind your cashews and optionally add a little neutral oil to play on the texture

Homemade cashew butter is spread on bread or rusks, accompanied by baked potatoes, replaces tahini in hummus recipes or in salad dressings.

Cashew milk recipe

As with butter, making your homemade cashew milk is advantageous economically and in taste. For 100 g cashew nuts, allow 200 g of water and mix, that’s all!

How to use cashew milk ?

Cashew milk can be consumed and used in exactly the same way as milk of animal origin:

  • to replace cow’s milk at breakfast, in coffee or chocolate or with cereals;
  • curdled and fermented to make vegetable cheese;
  • for pancakes, in cakes, cookies, vegan biscuits.

Cashew for vegetable cheese

Cashew nuts are used to make different kinds of vegetable cheeses: brie, camembert, cheese with raclette or with fondue which allow you to indulge in traditional dishes. You can also use these cashew-based vegetable cheeses to grate them on pasta or pizza.

Vegan tarama with cashew nuts

Mix 50 g of cashew nuts soaked in water beforehand for 4 hours, a teaspoon of chia seeds soaked in water for 5 minutes, a teaspoon of cooked beetroot, a dried tomato, a little juice lemon to taste, a little water, salt and pepper.

Taste, adjust the seasoning if necessary and vary the quantity of water to obtain the desired texture.

In salads

Cashew nuts add flavor and deliciousness to raw vegetable salads or other rice, pasta, wheat, quinoa salads, air fried vegetables, etc.

In desserts: crème brûlée made from cashew nuts

Cashew-based crème brûlée ingredients

  • 150 g of plain cashew nuts soaked in water for 2 hours
  • 35 cl of water
  • 75 ml agave syrup
  • 3 g of agar-agar
  • a vanilla pod
  • powdered sugar to caramelize the crème brûlée

Creme brulee preparation made from cashew nuts

Boil the water and add the agar-agar. Stir and leave for a minute. Put in the blender and mix with all the other ingredients.

Put the cream in the ramekins then let it cool to room temperature. Then place it in the fridge for at least 3 hours.

Before serving, sprinkle the cashew nut crème brûlées with sugar and caramelize with a kitchen blowtorch.
