Vegetarian salads

Allies for busy people who need to eat on the go without sacrificing quality, here are two simple and tasty salads. They can also be used as a starter in a menu vegetarian with a main course.

Greek salad

In a salad bowl, mix chickpeas, cubed tomatoes, sliced cucumbers, black olives, chopped onion and feta. Season with your favorite vinaigrette and voila, it’s ready!

Red cabbage, carrot and hazelnut salad

Other ideas for vegetarian salads: slice some red cabbage, grate a carrot and add a few hazelnuts and air fried kale chips. Serve with vinaigrette.

Vegetarian recipes without cooking: toast

Take some good bread and cut into nice slices that you garnish as desired:

  • tomatoes , mozzarella, black olives and a dash of olive oil
  • vegetable ham, a lettuce leaf and cheese (vegetable or not) grated
  • tomatoes , basil, garlic powder, salt and pepper
  • ricotta , tomatoes, yellow peppers, salt and pepper
  • cheese (vegetable or not) spread, thinly sliced apples or pears and a few nuts.

Cold soups

Served chilled, cold soup is a no-cook vegetarian dish particularly appreciated in summer when it is hot:

  • soup : mix 1 540 ml can of corn with 25 cl of coconut milk, a tomato and a clove of garlic, salt and pepper
  • cold pea soup: mix a 500 g can of peas with a little olive oil and crème fraîche or vegetable cream, 6 mint leaves, salt and pepper . This recipe also works well replacing the peas with cucumber.
