Ingredients:
- 2 cups (50g) fresh basil leaves, packed
- 1 tbsp (15ml) fresh lemon juice
- 1/3 cup (50g) pine nuts, lightly toasted
- 1/3 cup (40g) freshly grated Parmesan cheese
- 2 cloves (6g) garlic, peeled
- 1/2 cup (120ml) extra virgin olive oil
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
Instructions:
- Place the toasted pine nuts and peeled garlic cloves into the food processor. Pulse several times until the mixture resembles coarse sand.
- Add the fresh basil leaves, lemon juice, salt, and pepper. Pulse in short bursts until the basil is finely chopped but not yet a paste.
- With the motor running on low, slowly drizzle in the olive oil in a steady stream until the sauce is smooth and velvety.
- Add the grated Parmesan cheese and pulse 2-3 times just until combined.
