Ingredients:

  • 2 cups (50g) fresh basil leaves, packed
  • 1 tbsp (15ml) fresh lemon juice
  • 1/3 cup (50g) pine nuts, lightly toasted
  • 1/3 cup (40g) freshly grated Parmesan cheese
  • 2 cloves (6g) garlic, peeled
  • 1/2 cup (120ml) extra virgin olive oil
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Place the toasted pine nuts and peeled garlic cloves into the food processor. Pulse several times until the mixture resembles coarse sand.
  2. Add the fresh basil leaves, lemon juice, salt, and pepper. Pulse in short bursts until the basil is finely chopped but not yet a paste.
  3. With the motor running on low, slowly drizzle in the olive oil in a steady stream until the sauce is smooth and velvety.
  4. Add the grated Parmesan cheese and pulse 2-3 times just until combined.
