Ingredients:
- 1 cup (250g) natural creamy peanut butter
- 1/2 cup (140g) plain Greek yogurt
- 1/3 cup (80ml) pure maple syrup
- 1 large egg
- 2 cups (180g) rolled oats
- 1/4 cup (40g) hemp hearts
- 2 tbsp (20g) chia seeds
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 1/2 cup (85g) dark chocolate chips
- 1/4 cup (30g) crushed walnuts
Instructions:
- In a large mixing bowl, whisk together the natural peanut butter, Greek yogurt, maple syrup, and egg until the mixture is completely smooth and emulsified.
- Add the rolled oats, hemp hearts, chia seeds, baking soda, and sea salt to the wet mixture. Fold together until no dry pockets remains.
- Gently fold in the dark chocolate chips and crushed walnuts if using.
- Allow the dough to rest for 5 minutes. This critical step allows the oats and chia seeds to hydrate, ensuring a chewy texture.
- Preheat oven to 350°F (175°C). Scoop the dough into 12 large portions onto a parchment-lined baking sheet.
- Bake for 12 minutes or until the edges are golden brown. Let cool on the pan for 10 minutes to set before moving.
