Ingredients:

  • 1 cup (250g) natural creamy peanut butter
  • 1/2 cup (140g) plain Greek yogurt
  • 1/3 cup (80ml) pure maple syrup
  • 1 large egg
  • 2 cups (180g) rolled oats
  • 1/4 cup (40g) hemp hearts
  • 2 tbsp (20g) chia seeds
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup (85g) dark chocolate chips
  • 1/4 cup (30g) crushed walnuts

Instructions:

  1. In a large mixing bowl, whisk together the natural peanut butter, Greek yogurt, maple syrup, and egg until the mixture is completely smooth and emulsified.
  2. Add the rolled oats, hemp hearts, chia seeds, baking soda, and sea salt to the wet mixture. Fold together until no dry pockets remains.
  3. Gently fold in the dark chocolate chips and crushed walnuts if using.
  4. Allow the dough to rest for 5 minutes. This critical step allows the oats and chia seeds to hydrate, ensuring a chewy texture.
  5. Preheat oven to 350°F (175°C). Scoop the dough into 12 large portions onto a parchment-lined baking sheet.
  6. Bake for 12 minutes or until the edges are golden brown. Let cool on the pan for 10 minutes to set before moving.
