Ingredients:
- 125g creamy peanut butter
- 65g maple syrup
- 65g packed brown sugar
- 5ml vanilla extract
- 125g all-purpose flour
- 3g baking soda
- 1.5g salt
- 85g vegan semi-sweet chocolate chips
- 30g chopped roasted peanuts
Instructions:
- Preheat your oven to 350°F (175°C) and line your tray.
- In a large bowl, whisk together the peanut butter, maple syrup, brown sugar, and vanilla until smooth.
- Sift in the flour, baking soda, and salt. Fold together until no streaks of white flour remain. If adding chocolate chips or peanuts, fold them in now.
- Scoop rounded tablespoons of dough and place them 2 inches apart on the baking sheet. Press a fork into the top in a criss-cross pattern.
- Bake for 10-12 minutes until the edges are golden but centers look slightly soft. Let them cool on the pan for 10 minutes before moving to a wire rack.
