Ingredients:

  • 125g creamy peanut butter
  • 65g maple syrup
  • 65g packed brown sugar
  • 5ml vanilla extract
  • 125g all-purpose flour
  • 3g baking soda
  • 1.5g salt
  • 85g vegan semi-sweet chocolate chips
  • 30g chopped roasted peanuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your tray.
  2. In a large bowl, whisk together the peanut butter, maple syrup, brown sugar, and vanilla until smooth.
  3. Sift in the flour, baking soda, and salt. Fold together until no streaks of white flour remain. If adding chocolate chips or peanuts, fold them in now.
  4. Scoop rounded tablespoons of dough and place them 2 inches apart on the baking sheet. Press a fork into the top in a criss-cross pattern.
  5. Bake for 10-12 minutes until the edges are golden but centers look slightly soft. Let them cool on the pan for 10 minutes before moving to a wire rack.
