Vegan starters for Christmas
Vegan tofu tarama
Ingredients
- 200 g plain tofu
- 2 tablespoons of rice cream
- 2 tablespoons of plain soy yogurt
- 1 teaspoon of beetroot juice or powder
- 1 tablespoon of neutral oil
- 1 tablespoon of lemon juice
- 1 pinch of salt
Preparation
Place the ingredients in a blender and blend until desired smoothness.
Vegan mushroom cappuccino
The second vegan starter for Christmas is the vegan mushroom cappuccino.
Ingredients
- 20 cl of soy cream
- 250 g button mushrooms
- 2 shallots
- 3 tablespoons of neutral oil
- 20 cl of vegetable broth
- salt , pepper, chives
Preparation
Brown the shallots in oil and once translucent, add the mushrooms and leave for 10 minutes. Salt then pepper.
Mix the mushrooms and 10 cl of soy cream, then add broth little by little, until the desired thickness is obtained. Pour the mixture into glasses.
Whip the rest of the soy cream then place it on top of the mushroom cream. Sprinkle with chives and serve.
Vegan dishes for Christmas
Tofu blanquette, for 4 to 5 people.
Ingredients
- 400g tofu
- 3 carrots
- 1 onion
- 250 g button mushrooms
- bouquet garni
- vegetable broth
- cornflour
- soy cream
- juice of a lemon
Preparation
Slice the onions and brown them , then add the sliced carrots. Cover.
Cut the tofu into cubes, fry it in a pan in oil until it browns.
Slice the mushrooms and add them to the casserole, then add the tofu, bouquet garni, salt and pepper. Cover with water + add a vegetable stock cube and simmer until the carrots are well cooked.
Take a ladle of broth and dilute the cornstarch then add the soy cream. Return this mixture to the casserole dish then stir, the sauce should thicken. Add cornstarch if it doesn’t thicken.
Add the lemon juice but taste before adding all the juice, some like it more or less lemony. Serve with rice.
Vegan dessert for Christmas
Chocolate and chesnut Christmas log
Ingredients
- 1 butternut
- 200 g of chestnut cream
- 300 g of dark chocolate
- 50 g of neutral oil
- 40 g of sugar
For the chocolate frosting:
- 200g dark chocolate
- 2 tablespoons of neutral oil
- 1 tablespoon of coconut sugar
- 25 cl of soy cream
Preparation
Cut the butternut and steam it for 15 minutes.
In a container, mix the chocolate squares, the chestnut cream and the neutral oil
Melt it in a bain-marie until the mixture is homogeneous. Add the butternut and mix. Pour the mixture into a cake mold and let it rest overnight in the fridge.
Unmold the log.
Melt the oil and coconut sugar until boiling then add the chocolate pieces, stirring constantly. When the mixture is very smooth, spread it on the log, then form lines with a fork.
Leave to rest for 1 hour.
