- 20 g harissa
- 50 g cooked beetroot
- 2 tablespoons of tomato paste
- 200 g of wheat gluten flour (to bind the preparation)
Preparation of vegetarian merguez
Cook the lentils in water (if you don’t have time, can them cooked).
Once cooked, mix them in the blender with harissa, tomato paste, olive oil, beets, spices and salt.
Add the gluten to the preparation. Mix.
Shape this preparation into sausages which you put in cling film.
Steam for 10 minutes then remove the cling film. You can now cook your vegetable merguez in a pan, plancha, barbecue, air fryer, etc.
