Simple vegetarian dish: red lentil dahl
Welcome to India with this typical dish of local cuisine. This vegetarian family dish is great for everyday use: it’s a lentil curry served with rice to make a complete meal.
Coral lentil dahl for 4 people
Ingredients – Coral lentil dahl
- 250 g of coral lentils
- 20 cl of coconut milk
- 1 onion
- 2 tbsp. to s. curry powder
- 2 tbsp. to c. tomato paste
- 1 clove of garlic
- 2 cm of ginger
- vegetable oil
- salt
- 1 bunch of coriander
- 300 g basmati rice
Preparation: 15 mins
Cooking time: 25 mins
Preparation – Coral lentil dahl
- Rinse the lentils, put them in a saucepan filled with boiling water and cook for about a quarter of an hour, the lentils should be tender
- Cook the rice and keep it warm
- Chop garlic, onion and ginger and fry them in the pan for 5 minutes
- Add the spices and tomato paste and mix
- Add the coconut milk, salt, mix and cook for 5 minutes
- Add the cooked and drained lentils then mix
- If the mixture is too dry, add a little water
- Sprinkle with chopped fresh coriander leaves and serve with the rice.
Gourmet vegetarian dish: vegetarian mafé
Mafé is a slow-cooked dish that comes straight from Mali. Traditionally prepared with chicken, it can easily be transformed into a simple and delicious vegetarian dish with carrots, potatoes and white cabbage.
Vegetarian mafé for 6 people
Preparation: 10 minutes
Cooking time: 45 minutes
Ingredients – vegetarian mafé
- 1 can (475 g) peanut paste
- 1 C. to s. sunflower oil
- 2 onions
- 3 cloves of garlic
- 1 C. to s. tomato paste
- 1 stock cube
- 4 carrots
- 4 potatoes
- 4 leaves of white cabbage
- Salt, pepper, chili
Preparation – Vegetarian Mafé
- Chop garlic and onions and brown them in oil for 5 mins
- Add the tomato paste
- In a stewpot dilute the stock cube in 1.5 liters of hot water, dilute the stock cube in hot water, then add the peanut paste and mix
- Cover and let simmer
- Cut carrots , potatoes and cabbage leaves into large pieces and put them in the stewpot: first the carrots, then 5 minutes later the potatoes and 5 minutes later, the cabbage: leave for 10 minutes
- It’s cooked when a knife blade passes through the vegetables without any problem.
- Serve with rice
Vegetarian recipe: eggplant stew with chickpeas
This stew is a vegetarian recipe that can be eaten alone or with pasta, rice or wheat. Fragrant, easy and delicate, this unique vegetarian dish can also be eaten cold with toast.
Eggplant and chickpea stew for 5 people
Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients – Eggplant stew with chickpeas
- 2 eggplants in pieces
- 1 tsp dried thyme
- 1 chopped onion
- 2 cloves of garlic, pureed
- a few leaves of chopped fresh parsley
- 1 case of sugar
- 400 g canned tomato puree
- 400 g canned chickpeas, drained and rinsed
- olive oil
- salt and pepper
Preparation – Eggplant stew with chickpeas
- Brown the eggplant pieces and the thyme for 5 minutes in a frying pan with the olive oil
- Add onion and garlic and leave for 5 minutes.
- Add sugar, tomato, chickpeas, cover and simmer for 15 minutes
- It’s done when the sauce has thickened a little and the eggplant is tender.
- Taste and adjust the seasoning if necessary.
- Drizzle with a drizzle of olive oil and serve.
